Taste Causeway at the Bushmills Salmon & Whiskey Festival
Sep 27, 2024We're really looking forward to the exciting line up of events planned for the upcoming Salmon & Whiskey Festival taking place in Bushmills on 5th and 6th October.
Join some of our wonderful Taste Causeway members at the newly transformed Courthouse in Bushmills for an amazing showcase of local food and drink.
There will be whiskey tastings, food demos, delicious recipes, Irish coffee tastings, and cookery demos in the Taste Causeway Cookery Theatre with celebrity chef Paula McIntyre!
Our Taste Causeway Recipes and Stories books by Paula McIntyre will be on sale in the retail area. Books will be signed by Paula after each cookery demo on production of the book plus receipt.
Saturday 5th October
10am - 10:45an: Tasting with Partie de Moi (Retail Space in The Courthouse)
Join Stephanie Neumann-Flynn from Partie de Moi for tastings from her range of artisan spice blends.
Partie de Moi spices have been developed from a passion for baking and cooking and are gently roasted to release flavours and natural oils, before grinding, making them burst into life when added to recipes. The range currently includes Artisan Pumpkin Spice, Artisan Winter Spice, Atlantic Everything, Artisan Sugar and Spice and Omi Seasoning.

11am - 11:45am: Tasting with Dundarave Estate (Retail Space in The Courthouse)
Join Dundarave and enjoy some samples from their range of artisan food and drink products including fudge, shortbread and chutney from their recent collaboration with Bushmills Distillery! Chat to head chef Niall about all things cheese & chutney pairings and get some great tips on creating fantastic platters.
Head Chef Niall McGinn and the team at Dundarave have worked hard to develop their own range of farm produce for everyone to enjoy with includes a range of jams and chutneys, apple cider vinegar, apple juice and coffee rub seasoning.

12noon - 12:30pm: Paula McIntyre and Chestnutt’s Farm (The Courthouse Demo Kitchen)
Celebrity Chef Paula McIntyre will be joined in the Taste Causeway Cookery Theatre by Alison Chestnutt from Chestnutt’s Farm for a dairy inspired cookery demo and Producer’s Chat featuring Chestnutt Farm’s award winning yoghurt and milk.
The Chestnutt Family have been farming on their land near the coastal town of Portrush since 1913 and currently milk a herd of 250 cows which are bred using a 3 way cross of Holstein, Viking Red and Montbeliarde.
The Chestnutt’s luxurious, thick and creamy Greek style yogurt is made within their production unit on the farm from their own non homogenised milk and a tiny bit of culture; the yogurt is then incubated overnight before being strained through a Muslin Cloth to remove the whey!

12noon to 1pm - Cookery Demo with Ian Orr from Bushmills Townhouse at Main Street Car Park
Nestled in the captivating town of Bushmills, a short distance from the iconic Giant’s Causeway, Bushmills Townhouse offers an exquisite blend of luxury suites and superb dining.

2pm - 2:30pm: Paula McIntyre and Lir Whiskey (The Courthouse Demo Kitchen)
Paula will collaborate with Lir Whiskey in the Taste Causeway Cookery Theatre to create a whiskey cocktail paired with a whiskey inspired dessert.
Surrounded by nature and steeped in history, there could be no better setting to create whiskey than amongst the mountains and valleys in the Glens of Antrim overlooking the Irish Sea.
The whiskey takes its name from the mythical tale ‘The Children of Lir’

3:30pm - 4pm: Paula McIntyre and Moyletra Moileds (The Courthouse Demo Kitchen)
Paula will be joined in the Taste Causeway Cookery Theatre by Davud Scott from Moyletra Moileds to showcase and tell the story of the amazing Moilie Beef.
The Scott family have been farming at Moyletra Farm for just over 140 years. They have long been besotted with the Irish Moileds and are dedicated to help ensure the survival of this rare and special breed of cattle. The Scott's pedigree Moilies live happy outdoor lives thriving on a diet of pasture and foraged treats. Being slowly matured and grass fed, Irish Moiled beef is in a class of its own for its distinctive taste and texture.

3.45pm to 4.45pm – Cookery demo with Sean McLaughlin from Fullerton Arms. Sharvagh House
The Fullerton Arms & Guesthouse is located in the heart of Ballintoy on the stunning north coast of Ireland. There are a range of recently refurbished ensuite bedrooms with all the amenities you could possibly to ensure you have a comfortable and memorable stay. The Fullerton Arms serves traditional Irish cuisine using the best local produce for you to enjoy after a day spent exploring the local area.

4pm - 4:30pm: Demo and Tasting with The Chocolate Manor (Retail Space, The Courthouse)
Producing luxurious, hand-crafted chocolate, personalised for you is only a small, but delicious, part of what the team do at the award winning Chocolate Manor in Castlerock. As well as creating unique and indulgent treats, they also offer a range of experiences that reveal the mysteries of the wonderful world of chocolate.
The Chocolate Manor run scheduled sessions or you can book yourself in for a unique and personal experience. If you stop by when they’re making chocolate, you’ll be able to watch them at work. If you just want some delicious artisan goodies, they also have a Chocolate Shop and Artisan Food Emporium that is, quite simply, handcrafted heaven.

Paula will be joined in the Taste Causeway Cookery Theatre by Wendy Dempster from The Lamb Van for a cookery demo and Producer’s Chat featuring seasonal lamb dishes perfect for Autumn.
The Lamb Van’s delicious high-quality, grass-fed and incredibly delicious NIFQA lamb are ethically reared on the Dempster’s farm near Ballymoney.
They sell fresh lamb cuts direct from the farm and via their online shop. They can also be found at many events serving up contemporary street food made from their pasture raised lamb from their converted horsebox.

Join Graham from Causeway Coffee for an Irish Coffee Demo using their award winning range of coffees.

Join Ashley from North Coast Cocktails in Main Street Car Park at 2:30pm for some cocktail demos. Ashley will be joined by Paula McIntyre at 3:45pm for lots more cocktail making and recipe inspiration.

Paula McIntyre in partnership with Basalt Gin will showcase their wonderful spirit collection. Join them in the Taste Causeway Cookery Theatre for tastings, cocktail ideas and inspiring tips on how to use the spirits in seasonal recipes.

Whiskey Tour & Tastings at Bushmills Distillery

Of course, no Bushmills festival would be complete without paying homage to its world-renowned whiskey. Visitors can enjoy special tours and tastings at the historic Bushmills Distillery, where they’ll get to experience the craftsmanship behind Northern Ireland’s favourite tipple.

Sunrise ‘Catch your Breakfast’ Boat Tour with Causeway Boats
North Pier, Portrush Harbour
Friday 4th and Saturday 5th 6.30am-10.30am
For those seeking a unique adventure, Causeway Boats will be offering a special Salmon and Whiskey Boat Tour, taking visitors along the rugged coastline to discover the local fishing traditions and stunning views of the Causeway Coast and showcasing the deep connection between the sea, the land, and the local produce that defines this region.
